My Go-To Breakfast

I used to be the worst at eating breakfast! Is that even a thing you can be bad at? Apparently so.
Now if we’re talking leisurely weekend brunch? I am there! Possibility of mimosas? I am ready! I just never remember or make time for breakfast on my own, especially during the work week. I would throw a random piece of fruit in my purse on my way out the door hoping I remembered it was in there or just wait until lunch. I think this is partially because I don’t love all the traditional breakfast foods and I was going through a dairy-free milk crisis where I couldn’t find one I liked.

However, thanks to the magical wizards at So Delicious, I have found my new go-to breakfast! It’s quick, it’s easy and I look forward to it every morning. It’s the yogurt parfait. Each day I start with a cup of So Delicious dairy-free yogurt and then add some granola and fruit. It takes me literally one minute to throw together, two minutes if I havent already washed the fruit, and I am on my way with a happy belly. I am full until lunch and I can add as much fruit and granola as I want to bulk it up.  I haven’t had a flavor I don’t like yet. They are all so good, but I was shocked how spot on the key lime flavor is! It’s amazing! Most commonly found in stores near me are vanilla, raspberry and strawberry. The possibilities for combinations are endless. Different fruit, different granola, different yogurt flavors, it’s enough of a routine that I can easily make it without a second thought in the morning, but gives me enough flexibility that I don’t feel like I am eating the same thing over and over again. It’s a win-win!

Eating breakfast might seem insignificant to most people but to me, it’s a big deal. It was something I really needed to adjust in my daily routine. Breakfast is so important for your body and it’s not called the most important meal of the day for nothing!

My local Barnes and Noble closed a few weeks ago and the last visit was so sad. There’s a part of me that always thought I would see a book I wrote on one of these shelves. 

I’ve spent hours browsing in this store, bought every required school reading book here, with the coordinating spark notes, of course.

It’s where I would find the books that filled my beach bag every summer and shopped for gifts every Christmas. 

I found my first vegan cookbook here when I was desperately looking for recipes that had ingredients I was familiar with and it was one of the first places I went when I moved back from the west coast. 

There’s just nothing like your hometown Barnes and Noble 🤍
